We’re making: White Chocolate Toppers for your PÂTISSERIE New York Style Baked Cheesecake.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

METHOD

Please note that you can use whatever left overs you have in your pantry, so don’t feel restricted by our choices.

Firstly, allow your Baked cheesecake to thaw as per the instructions on the box.

How to make your toppers

  1. Place baking paper onto your flat oven tray.
  2. Using a small tin or a circular cookie cutter as a stencil, mark 8 circles on the baking paper. This recipe yields between 8 to 12 toppers.
  3. When done, turn the baking paper over so that the inked side is on the reverse and spray with non-stick spray.
  4. Now, take your white baking chocolate and break it up into a microwavable bowl and place into your microwave. Initially, microwave for 1.minute and 20 seconds until the chocolate starts to melt and then remove mix and back in again. Thereafter melt in 1 minute increments until the chocolate has melted. Every minute remove from the microwave, mix and back in it goes for another minute. It should take about 3 minutes, depending on the brand and thickness of chocolate. But if you’re not sure, rather melt in shorter increments to eliminate burning the chocolate. 
  5. When done, give it one last mix, to ensure that all the chocolate blocks have melted evenly into a thick pouring consistency.

Right, let’s make our chocolate toppers. We must work fast, before the chocolate starts to set again.

  1. Using a tablespoon, scoop a spoonful of the melted chocolate onto each circle stencil, trying to keep each scoop in the circle. The chocolate topper neds to be thickish otherwise it will break when we you try to remove it off the baking paper once the chocolate has set.

If you feel that you need to add more chocolate to reach the desired size and thickness, do so carefully. If you do go over the circle, don’t panic, it’s fine. Unless you’re OCD in which case, you won’t be fine, so scrap and start again.

For the rest of us, continue until you’ve completed all the circles. If you still have chocolate left-over you can bring out a second tray and repeat the process until all the chocolate has been used up.

  1. Now take your nuts and your cranberries and whatever other dried fruit you’re using and place onto each of your chocolate medallion toppers. Place freely, making sure that all the toppings have partly immersed into the chocolate, that way they’ll set with the chocolate and not fall off once the chocolate hardens. The left-over nuts and dried fruit we’ll use for plating.
  2. And when finished, refrigerate for at least 20 minutes. You can pre-make them and store them in the fridge.

And 20 minutes later your New York Style baked cheesecakes have thawed.
