An Italian classic, re-worked! A simple summer pizza salad with simple ingredients.

TOMATO SLICES WITH MOZZARELLA & ROCKET

An Italian classic, re-worked! A simple summer pizza salad with simple ingredients.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

  • 1 x packet Happy Days Pizza Bases
  • Mozzarella cheese
  • Olive oil
  • Salt and pepper
  • 1 x medium ripe tomato
  • 1 x packet baby rocket
  • Balsamic crema

QUANTITIES OF INGREDIENTS

  • 1 x Happy Days base
  • 7 x slices Mozzarella cheese
  • 7 x slices medium ripe tomatoes
  • A drizzle of olive oil
  • Salt and pepper to taste (coarse)
  • 1 x handful baby rocket
  • A drizzle of balsamic crema

METHOD

HOW TO PREPARE YOUR TOPPINGS

  1. Place 1 x happy days pizza base in the oven for 10 to 12 minutes.

Now on a tray, prepare the toppings.

  1. Place your 7 tomato slices and your 7 mozzarella slices onto the tray. It might seem pedantic that we use the number 7, but that’s how many slices of each fit comfortably on this size pizza base. If your mozzarella isn’t round, that’s fine just cut square slices, to match the size of your tomato slices.
  2. Drizzle with olive oil and season with salt and pepper. Turnover and repeat. That’s your preparation done!
  3. Remove the pizza from the oven and let it rest for 3 to 4 minutes. You don’t want your cold salad toppings on a hot pizza base, it will taste uber yuck.
  4. Now, you can assemble the pizza. Place one tomato slice and alternate with a mozzarella slice, keep doing this until all your tomato and mozzarella slices are done. Make sure you overlap the slices onto each other. They must look like fallen domino’s.
  5. Now in a small bowl, add your rocket and drizzle with olive oil and season with salt and pepper. Toss them leaves and on the pizza it goes. Use your hands, much easier!
  6. Lastly, drizzle with balsamic crema, zig zagging it across the pizza.
