ITAL PIZZA SPINACH AND FETA PIZZINIS

Canapes, bites, munchies, nibbles, whatever you choose to call them, these pimped pizzinis will take the edge off anyone’s hunger.  

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

FOR CREAM CHEESE & SUNDRIED TOMATOES PIZZINIS

  • 1x Ital Pizza, Spinach & Feta Pizzinis
  • 1 x block/tub of cream cheese
  • 1 x packet sundried tomatoes in oil
  • 1 x onion
  • Handful of chives

FOR SPICY PRAWN PIZZINIS

  • 1x Ital Pizza, Spinach & Feta Pizzinis
  • 1x packet frozen prawns, peeled & de-veined
  • Olive Oil
  • 1 x garlic bulb or minced garlic store-bought
  • 3 to 4 red chillies
  • 1 x lemon
  • Salt
  • Sesame seeds (black preferably)
  • Parsley

QUANTITIES OF INGREDIENTS FOR CREAM CHEESE & SUNDRIED TOMATOES PIZZINIS

  • 1 x block of cream cheese – 250 gr
  • 5 x slices sundried tomatoes in oil
  • 1 x medium white onion, diced
  • 4 x chives, snipped

QUANTITIES OF INGREDIENTS FOR SPICY PRAWN PIZZINIS

  • 16 x frozen prawns, thawed, peeled & de-veined
  • A drizzle of olive oil
  • 1 x heaped tsp. minced garlic
  • 1 x tsp. red chillies in oil
  • 1 x flat tsp. lemon rind
  • 2 x tbsp. lemon juice
  • Salt to taste
  • 1 x tbsp. chopped parsley
  • 1 x flat tbsp. black sesame seeds

METHOD

TOPPING 1 | HOW TO PREPARE YOUR CREAM CHEESE & SUNDRIED TOMATOES PIZZINIS

  1. In a medium size pan, add a drizzle of olive oil and sauté the diced white onions, till they become translucent and soft. Once done, decant into ramekin or plate and set aside.
  2. Place the pizzinis on the parchment paper provided in the box and place them directly on the oven rack and bake for 10 to 12 minutes in a pre-heated oven (200 deg)
  3. Take your cream cheese block and using a fork ‘smoosh’ and ‘smoosh’ ‘till it’s all mashed up in the bowl.
  4. Take your scissors and snip the tomatoes into small strips and add them to your bowl of cream cheese.
  5. Now add your caramelised onions and using the same fork, mix until all the ingredients have fused together. If the sundried tomatoes start to break-up, even better as they will absorb into the cream cheese. Yummy!
  6. Remove the pizzinis from the oven and spoon a dollop of your mixture onto 16 of the pizzinis.
  7. Garnish with chopped chives and you’re ready to serve.

Let’s tell you how to prepare topping number 2!

TOPPING 2 | HOW TO PREPARE YOUR CREAM CHEESE & SUNDRIED TOMATOES PIZZINIS

  1. Place the pizzinis on the parchment paper provided in the box and place them directly on the oven rack and bake for 10 to 12 minutes in a pre-heated oven (200 deg)
  2. In a bowl, place your 16 thawed prawns.
  3. Then, add a drizzle of olive oil, the minced garlic, the red chillies in oil, the lemon rind and lemon juice as well as salt to taste. Once all these ingredients are in the bowl, give them a good mix to ensure the prawns are beautifully coated, and set aside.
  4. Place a large pan on the stove and wait for it to heat up. Once heated, bring your prawns and decant into the hot pan.

With prawns it’s very easy to know when they’re done. They start off translucent and grey and you know they’re ready when they’ve turned completely opaque and salmon- pink in colour.

  1. Remove the pizzinis from the oven and top each pizzini with a prawn and drizzle some of the spicy oil from the prawns onto each pizzini.
  2. Garnish with chopped parsley and some black sesame seeds. If you don’t have sesame seeds it’s not the end of the world, I’ll be a tad disappointed, ‘cause it finishes it off beautifully, but perhaps next time try and get your ingredients together on time, before you start cooking!

Now, let’s nibble them nibbles! Call the troupes, eat and enjoy, even though you might not have black sesame seeds on your designer spicy prawn pizzinis! #justsaying
