A different take on a classic pizza base!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

YOU WILL NEED

QUANTITIES OF INGREDIENTS

  • 1 or 2 x Ital Pizza Classic Bases
  • 80g x smoked salmon, gently torn into strips
  • Cream cheese, enough to cover each base of each pizza
  • 1 x avocado, quartered.
  • Olive oil, a drizzle
  • A squeeze of lemon juice
  • 1 x tsp. black sesame seeds (optional)
  • A few sprigs of fresh dill
  • 5 to 6 chives, snipped

METHOD

So let’s get started

  1. This is not a warm pizza, it must be served at room temperature.
  2. We’ll be using Ital pizza’s Classic bases. So place them in the oven for 10 to 13 minutes – pre-heated to 220 deg.
  3. Once the bases are done, remove from the oven and allow rest for at least 20 minutes.
  4. Firstly the avocado – Cut in half – remove the pip and slice with the skin – slice each half in the middle and then in half again. Each half gets cut into quarters. Only then remove the skin. It prevents your fingers from mooshing the avo, if you were to peel it first.
  5. Now Squeeze the juice of half a lemon onto the avocado, it prevents it from going brown and set them aside.
  6. Take your cream cheese and spread across the entire surface of your base. This is why the base needs to be cool, otherwise the cream cheese will get all runny!
  7. Now the avocado, peel the skin and place on top of the cream cheese.
  8. Add some salt and some coarse black pepper to taste.
  9. And now the smoked salmon, gently tear into strips and simply place and drape over the avocado slices.
  10. Let’s snip some chives over the pizza.
  11. And now the dill, beautiful bunches of dill wedged in and around the avocado and finish off with a drizzle of olive oil and a sprinkle of some black sesame seeds. (optional)

 

And you’re ready to eat! A salmon, cream cheese, dill and sesame seed slice of pizza.
