A spicy Middle Eastern start to your morning, with eggs and shakshuka sauce on a delicious crispy pizza base.

There is nothing conventional about how we play in our kitchen!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK BREAKFAST RECIPE YOU WILL NEED

INGREDIENTS

  • Drizzle of olive oil
  • 1 x teaspoon crushed garlic
  • 1 x tin diced tomatoes
  • 1 x teaspoon tomato paste
  • 1 x teaspoon Chilli Flakes
  • 1 x teaspoon sugar
  • ½ x teaspoon paprika
  • ½ x teaspoon cumin
  • Salt and fine black pepper to taste
  • 1 x table spoon finely chopped parsley
  • 4 x eggs
  • 1 x cup grates mozzarella cheese
  • Dr. Oetker Ital Pizza Classic Margherita

METHOD

  1. In a medium size pan, add a drizzle of oil an once heated, throw in the crushed garlic and sauté for 2 minutes. Careful not to burn the garlic or it will leave a terrible bitter taste.
  2. Now add the tinned tomatoes and the tomato paste and mix thoroughly.
  3. Add chilli flakes, sugar, paprika, salt and pepper, cumin and flat leaf parsley and mix. Once mix allow it to simmer gently for aprox. 15 to 20 minutes on a low heat. If you sense that the mixture is reducing too much, add ½ a cup of water and stir.
  4. Once done, set aside and keep warm. Don’t be scared to taste whilst cooking. If you feel that the shakshuka needs more bite, add more chilli flakes and so on with the rest of the herbs and spices.
  5. Remove the Classic Margherita pizza from the box and place on the grill.
  6. Sprinkle generously with the grated mozzarella and place in the oven for 10 to 12 minutes. ( 200 deg )
  7. Now let’s fry the eggs.
  8. Break all 4 eggs into a bowl.
  9. Heat a medium sized pan with a drizzle of olive oil.
  10. Once the oil has heated, gently pour the bowl of eggs into the hot pan.
  11. Add salt and pepper to taste and cover with a lid. Allow your eggs to cook to your personal preference.
  12. Once the eggs are cooked, take a large cookie circular cookie cutter and cut out the eggs yolks with a trimming of egg white and place on a plate.
  13. By now the pizza probably still needs about 7 minutes to complete baking. Don’t waste these 7 minutes. Cardio time as per video clip!
  14. Now, wash up, use a towel to dry your face and hands and let’s start putting this baby together!
  15. Remove the pizza from the oven and place it on a cutting board or a hard surface.
  16. Cut into 4 slices.
  17. Now generously spoon the shakshuka sauce onto each slice of pizza.
  18. Using a spatula, place each egg onto each pizza slice.
  19. Garnish with chopped parsley.
  20. If you haven’t already salted the eggs, you can do so now.

AND BREAKFAST IS READY! HOT AND SPICY, JUST THE WAY ONE WANTS ONES DAY TO START!
