From the med with love. A simple pizza with simple ingredients, makes this a weekly yummy staple in your home!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

  • 1 x Ristorante Mozzarella Pizza
  • 1 x small punnet baby tomatoes
  • 1 x olive oil
  • 1 x mozzarella packet or square pre-cut
  • 1 x small tub feta cheese plain (circles)
  • 1 x packet pitted olives (black and green)
  • 1 x small red pepper
  • 1 x small punnet fresh basil leaves
  • 1 x bottle dry oregano
  • Salt and course black pepper
  • 1 x small bottle, balsamic crema

QUANTITIES OF INGREDIENTS

  • 6 x mixed baby tomatoes cut in half
  • 100 gr x grated mozzarella
  • 100 gr x crumbled feta cheese
  • A drizzle of olive oil
  • ½ x red pepper diced
  • 4 to 5 x basil leaves torn
  • 10 x pitted olives (mix black and green)
  • A pinch of dry oregano
  • Salt and black course pepper to taste
  • A drizzle of balsamic crema

METHOD

  1. In a small bowl, add your halved tomatoes, a pinch of salt and black pepper, together with a pinch of dried oregano. Now drizzle with olive oil and gently mix and coat the tomatoes. Set aside.
  2. Remove pizza from packaging and place on your surface counter. Add your grated mozzarella and crumbled feta cheese onto the pizza, making sure you have evenly distributed the cheese.
  3. Now, add your halved olives and your diced red peppers.
  4. Using a flat spatula or egg lifter gently press down onto the pizza. This ensures that all the ingredients wedge snuggly into the cheese. Place your pizza directly onto the oven rack and bake for 10 to 12 minutes at 200 deg.

Always keep your eye on the pizza. 2 to 3 minutes extra can make a very big difference to its final taste.

  1. Once baked, remove and place directly onto a cutting board.
  2. Using a sharp knife or a pizza cutter, slice the pizza into 4 or 6 slices, depending on how hungry you are and whether you’re sharing or not!
  3. Finally, tear your fresh basil over the pizza, drizzle some balsamic crema over the pizza and you’re ready to serve.

Whatever your language, this Mediterranean pizza is wholesome, delicious, healthy and uber comforting!

Just remember, you don’t always have to share!
