PIZZA TOPPING IDEAS FOR YOUR KIDS

We’re turning these Minis into delicious snacks for the kids and for the adults too! 🍕🥰

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

Minis 1: Pineapple & peppadew biltong minis

  • 3 x cheese and tomato minis
  • 3 round slices of fresh pinapple

OR

  • 3 slices of tinned pinapples
  • 6 x mild peppadews, slivered
  • 1 x cup biltong slices
  • 1 x cup white cheddar or mozzarella

Minis 2: Halloumi, sweet chilli minis with avocado slices

  • 3 x cheese and tomato minis
  • 1 x ripe avocado
  • 1 x tbsp. sweet chilli sauce
  • 2 x slices of halloumi cubed and fried
  • 6 x baby tomatoes
  • A drizzle of olive oil
  • Sesame seeds – toasted
  • salt to taste
  • A sprinkle of grated white cheddar or mozzarella

Minis 3: Egg pizza basket

  • 6 x cheese and tomato minis
  • 6 x whole eggs
  • 3 x cocktail sausages
  • 1 x tablsepoon chutney
  • White cheddar
  • Salt and pepper to taste

METHOD

How to make your pineapple & peppadew biltong minis

  1. First, take your pineapple rings and sear them in a non-stick pan. Do not use any oil. Allow them to sear in their juice. About 4 min each side. When done, set aside on a plate and allow to cool to room temperature.
  2. Now, take your peppadews and slice them into quarters and set aside.
  3. Now prepare the minis for the oven. Take 3 minis and place them directly onto the oven tray. Sprinkle some white cheddar over each mini and in the oven, they go for 10 to 12 minutes at 200 degrees.
  4. When done, remove and place onto your work surface or cutting board or directly onto your serving plates.
  5. Now assemble. First the seared pineapple, then the sliced biltong on top of the pineapple, about 3 to 6 slices and lastly the peppadews.

And your first topping is done. Call on the kids, eat and enjoy!

How to make your halloumi, sweet chilli minis with avocado slices

  1. Take 2 to 3 slices of halloumi cheese and cut into cubes. Then add the sweet chilli sauce to the halloumi cubes and mix until the sweet chilli sauce has dressed each halloumi cube.
  2. Now bring out your minis and place directly onto the oven tray. Add the halloumi cubes onto each pizza slice (6 to 7 cubes) and in the oven for 10 to 12 minutes, pre-heated to 200 degrees.
  3. Whilst the minis are baking, cut your baby tomatoes into quarters, set aside.
  4. Then peel your avocado, remove the pip and cut in half. Then cut each half in half again, on a plate and set aside. Drizzling some lemon juice will stop the avocado from going brown.
  5. Now the pizza is ready. Place one-quarter avo on each slice.
  6. Add one baby tomato, onto each pizza. 1 tomato cut into quarters.
  7. Some salt to taste and finish off with a sprinkle of toasted sesame seeds. You can toast them in a pan or in the oven. Just keep your eye on them. They burn very quickly.

And pizza topping 2 is done and dusted! Now the third and final topping!

How to make your egg pizza basket

  1. Place your 6 minis is the oven for 4 minutes. (200 degrees). We are not baking them till ready. We want to thaw so that we can mould them into our muffin tin.
  2. When in the oven, cut your 3 cocktail sausages in half lengthways and then cut each half into slices. The smaller the slices the better.
  3. Now empty the sausages into a bowl and mix with a tablespoon of chutney. Mix until the sausages are well coated with the chutney.
  4. Take your muffin tin and spray with spray and cook, especially the sides.
  5. By now, your pizza slices have thawed, so remove them from the oven.
  6. Now, take each thawed pizza slice and mould it into the muffin cup, pressing the minis up against the sides, to create a cup.
  7. Now you can add a sprinkle of white cheddar on each pizza cup.
  8. Add the 4 to 5 cocktail sausage slices into each pizza cup.
  9. Now the eggs. It’s better to break each egg individually into a ramekin. We don’t expect you to have 6 ramekins at home. So use the same ramekin 6 times. We do this so that the egg will fall easier into the muffin cups. All eggs differ in size, so if you find that some eggs might have too much egg white, remove some of the egg white from your ramekin. This will ensure that the egg does not overflow from the cup.
  10. So, in they go one by one until all 6 eggs are in the 6 cup holders.
  11. When done, tap and shake the muffin tray on the counter to ensure the egg white fills the muffin cup evenly.
  12. And back to the oven for 8 to 10 minutes or to your personal preference, depending on how soft or hard you want your eggs.
  13. And when ready, using a sharp knife, remove each egg cup from the tin and place onto a plate.
  14. We chose to garnish with some snipped chives, but not all kids like chives. So you decide.

And topping 3 is done. Call the kids and enjoy!
