Where using all your left-overs from your fridge to make these fabulous pizza toast toppings.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

YOU WILL NEED

SHOPPING LIST

QUANTITIES OF INGREDIENTS

  • Leftover salad with greens and tomatoes
  • Leftover salami
  • Leftover roasted veggies with carrots, potatoes,onions
  • Leftover Bolognese
  • Leftover sweetcorn or leftover peas or leftover beans or leftover carrots
  • Leftover ripe avocado
  • Leftover onion
  • 5 – 6 rashers of bacon, cut into squares
  • Leftover boiled eggs
  • 1-2 x red chillies, sliced and placed in ramekin with a tbsp. of olive oil
  • Drizzile of oilve oil
  • 5 – 6 sprigs of fresh thyme – per pizza
  • Endamame beans or any other leftover nuts, like peanuts or chashews

GARNISHING SUGGESTIONS

  • Sesame seeds
  • Chopped parsley
  • Fresh Thyme
  • Pumpkin seeds or sunflower seeds
  • Fresh basil leaves
  • Baby Greens

METHOD

LET’S MAKE OUR PIZZA SLICES

  1. Preheat your oven to 200 ˚ C and place your Slices directly onto the oven grill. We snap the slices in half prior to baking.

ONCE YOUR PIZZA SLICES ARE READY, YOU CAN START TOPPING WITH ALL YOUR LEFTOVER COMBINATIONS.

  • Leftover salad greens with tomatoes using salami or any other cold meats in your fridge.
  • Leftover roasted veggies topped with optional fresh thyme and pumpkin seeds.
  • Leftover Bolognese sauce topped with leftover sweetcorn or leftover peas or leftover beans.
  • Leftover ripe avocado smooshed with a fork, add a squeeze of lemon, slat and spread onto the pizza. Then add a boiled egg which you can slice into halves or quarters. Add some onion and sprinkle with sesame seeds or some baby greens.

Yes, you’ve cleaned out the fridge without wasting, lunch is ready and hopefully everyone is happy, for now anyway!
