A pizza snack to keep you snacking whilst you braai.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

  • 2 x Dr. Oetker Ristorante Pizza Mozzarella
  • Fresh basil
  • Pine nuts
  • Parmesan
  • Olive oil
  • Salt & Pepper
  • Garlic cloves
  • Balsamic crema (reduction)
  • Emmental cheese

QUANTITIES OF INGREDIENTS

  • 2 x Dr. Oetker Ristorante Pizza Mozzarella
  • 1 x cup fresh basil
  • 3 TBSp pine nuts
  • 1/3 x cup finely grated parmesan
  • Half cup olive oil
  • Salt & pepper to taste
  • 3 x garlic cloves minced
  • A drizzle of balsamic crema (reduction)
  • 7 x cubes/squares of Emmental cheese

METHOD

  1. You need a blender and in that, add the basil leaves, pine nuts, minced garlic, salt and pepper to taste as well as your parmesan. Before starting to blitz, add only half of the olive oil into the blender. Pulse until all the ingredients are finely
  2. Once mooshed, open the blender and give it a mix, and now you can add the rest of the olive oil. Pulse again for a few seconds.

And you’re done! Your pesto is ready. Remove the blade and decant into a bowl. 

  1. Our little secret to pimp the pesto even more: a drizzle of balsamic crema. Mix it into the pesto.

The great thing with this pesto dip is that you can keep it in the fridge for days and use it on pasta later in the week.

  1. Now all you need to do is bring out your Ristorante Pizza Mozzarella and pimp with your Emmental squares. Place each square on top of the mozzarella slices so that all the cheese melts together. Pop in a preheated oven of 200 degrees for 10-12mins.

Bring out the pesto from the fridge, add friends, slice the pizza and dip and scoop.
