How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

YOU WILL NEED

QUANTITIES OF INGREDIENTS

  • Happy Days | Mini Pizza Bases
  • 500g x chicken livers
  • ¼ x cup olive oil
  • 1 red onion (½ per batch of livers)
  • 6-8 garlic cloves, crushed
  • 1 x tsp paprika
  • 250ml x peri peri sauce
  • ½ x cup cream
  • Juice of ½ a lemon

METHOD

LET’S START!

  1. Place your minis into the oven before starting with the chicken livers. The oven must be pre-heated to 200˚ for 10 to 12 minutes.

Right, let’s make some very peri-peri happy people.

  1. First, rinse and strain the chicken livers in a sieve and set aside.
  2. Now for the sauce. In a saucepan heat a quarter cup olive oil on medium heat.
  3. Once heated add the 6- 8 crushed garlic cloves and cook until aromatic.
  4. Once you start to smell the garlic, add a teaspoon of paprika and stir, lowering the heat and then add the peri- peri sauce. But go easy with the peri-peri if you’re not used to hot.
  5. Now add the half a cup of cream and stir to combine.
  6. Season with salt and pepper, bring it to a simmer and add a squeeze of lemon juice. Give it one last stir and set aside.

Now that the sauce is done, let’s get started with the chicken livers.

  1. First the raw onion in a pan (½ per batch) , a drizzle of olive oil on medium to high heat. Please don’t throw them into the pan all at once; they’ll start boiling instead of frying.

Rather fry the livers in batches for 3 to 4 minutes on each side. You don’t want to eat your chicken livers too rare.

  1. Once the chicken livers are done, bring your peri-peri sauce and pour it over the chicken livers and stir through allowing the sauce to coat the livers and heat through.

By now your minis are ready and out the oven. For this recipe your mini pizza bases don’t need to be piping hot.

You can either top the chicken livers directly onto your minis or use the minis to mop up all that delicious yumminess! And a garnishing extra, a sprinkle of parsley and you’re done!
