Take your favourite pasta dish to the next level with our awesome Lasagne Bites recipe. It’s a cheesy, good-for-the-soul snack that will keep even the fussiest eaters coming back for another taste. Remember, sharing is caring so pass this on to your lasagne-loving friends and family.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

INGREDIENTS

  • 2 x cup grated cheddar
  • 2 x cup grated mozzarella
  • 1 x egg beaten
  • ¾ cup bread crumbs
  • Salt and pepper to taste
  • 5 to 7 x basil leaves
  • Dr. Oetker Nice’nEasy Beef Lasagne

METHOD

  1. Place your beef lasagne (for 8 minutes) into the microwave, ensuring you’ve removed the thin film.
  2. Once the lasagne has been cooked, remove from microwave and decant into a medium sized mixing bowl.
  3. Using a fork break-up the lasagne and mix until the consistency is that of a thick mixture.
  4. Now, add the grated cheddar and mozzarella cheese, the beaten egg, the breadcrumbs, salt and pepper (to taste), as well as the basil leaves and mix till all the ingredients are well distributed throughout the lasagne mixture.
  5. Now, cover in cling wrap and place in the fridge for a minimum of 1 hour. You can also make this the night before and leave it in the fridge overnight. The longer you leave it in the fridge the better. Once cold, it will be easier to mould the lasagne bites.

FOR THE NAPOLETANA SAUCE – YOU WILL NEED

INGREDIENTS

  • A drizzle of olive oil
  • 3 x sliced garlic cloves
  • 1 x chopped tinned tomatoes
  • 2 x tsp tomato paste
  • 1 x tbs sugar
  • 1 x tsp dried oregano
  • 5 x fresh basil leaves
  • Salt and pepper to taste

METHOD

  1. In a pan, on medium heat, add a drizzle of oil and wait for it to heat-up.
  2. Then add the sliced garlic and sauté. Once you see the garlic turning pink-ish in colour, remove from oil.
  3. Now add the chopped tinned tomatoes and tomato paste and mix.
  4. Add the sugar, dried oregano as well as salt and pepper to taste.
  5. Lastly add the basil leaves. You can either tear them or keep them whole.
  6. Lower the heat to a simmer and leave on the stove for approximately 20 to 25 minutes to reduce. If you feel that the pan needs some extra liquid, you can add some additional water and adjust salt and pepper and oregano accordingly. You want to cook-out the acidity of the tomatoes. The slower, the better. Because we will be using it as a dip, you want quite a reduced and chunky consistency.
  7. Once done, remove from stove and let it rest.

PREPARING YOUR LASAGNE BITES – YOU WILL NEED​

INGREDIENTS

  • 1 x bowl of flour
  • Your refrigerated bowl of lasagne mixture
  • 1 x bowl of breadcrumbs
  • 3 x whole eggs beaten in a bowl
  • 1 x tbs (tablespoon)

METHOD

HOW TO MAKE YOUR LASAGNE BITES

  1. Dust your hands with flour ( so that the mixture does not stick onto your hands )
  2. Using a table spoon, scoop one tablespoon of lasagne mix and place onto your hand.
  3. Using both your hands, mould the mixture into a ball. Then press gently in the centre to flatten the lasagne ball into a mini bite patty. Place on a plate or a flat tray.
  4. Continue until you’ve used-up all the mixture.

HOW TO CRUMB COAT YOUR LASAGNE BITES

  1. Now take your lasagne bites and roll them into your bowl of flour.
  2. Then roll them into your egg mixture ( shaking off any excess egg )
  3. Then, immediately roll them into the bread crumb bowl
  4. Now you must double-dip the lasagne bites. Place the lasagne bites back into the egg mixture bowl to re-coat and then, back into the bread crumb bowl.
  5. Re-shape using both your hands and place back onto plat or flat tray.
  6. Continue until you’ve coated all the lasagne bites.

And now you are ready to fry your lasagne bites.

HOW TO FRY YOUR LASAGNE BITES

  1. In a frying pan, drizzle some olive oil and heat. (Medium heat)
  2. Using tongs, place lasagne bites in the heated pan and fry for about 2 minutes either side or until golden brown. Please ensure your pan is on a medium heat otherwise anything stronger will burn the patties.
  3. Continue until all the lasagne bite are fried. Placing each bit onto a layer of paper towel to soak up the extra oil after frying and you’re done!

PLATING AND SERVING SUGGESTIONS

  • Place lasagne bites onto a large platter. Then in a small dipping bowl, decant your napoletana sauce and place either on the platter or on the side, so that guests can dip and eat. The napoletana sauce can either be served hot or cold. If you have any sauce left, it’s perfect on bread or on plane pasta.
  • Alternatively if you would like to plate the lasagne bites for your guests or family. Take 2 to 3 lasagne bites per guest and overlap them onto the centre of the plate. Using a teaspoon, drizzle the napoletana sauce over each lasagne bite and finish off with fresh basil.

Lasagne will never be the same!
