Relish this breakfast with fried egg & bacon, on a tomato- chutney slice and a little sweet something!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK BREAKFAST RECIPE YOU WILL NEED

SHOPPING LIST

  • ITAL PIZZA SLICES | Margherita
  • Eggs ( as many guests as you will be having)
  • 1 x packet of bacon (whichever part you like)
  • 1 x tin chopped tomatoes
  • 1 x bottle chutney
  • 1 garlic bulb or minced garlic
  • A handful of grated mozzarella (optional)
  • Salt &pepper to taste
  • A drizzle of olive oil
  • 2-3 x fresh basil leaves or baby leaves
  • Maple syrup or normal syrup or honey

QUANTITIES OF INGREDIENTS

  • 2 x slices (when frozen it looks like 1 rectangular piece)
  • 2 x Eggs or as many guests as you will be having
  • 3 to 4 rashers of bacon, cut into slivers
  • ¾ x tin chopped tomatoes
  • 1 x tbsp. chutney
  • 2 to 3 x garlic cloves or 1 x tsp. minced garlic
  • Salt &pepper to taste
  • A drizzle of olive oil to make tomato relish
  • A drizzle of sunflower oil for bacon and eggs or olive oil depending on your personal preferance
  • A handful of grated mozzarella (optional)
  • 2-3 x fresh basil leaves or baby leaves or rocket
  • Maple syrup or normal syrup or honey

METHOD

  1. In a medium pan, drizzle olive oil and wait for the pan to heat. Then add your garlic cloves or minced garlic. Allow to sauté till you can smell that delicious garlic aroma.
  2. Now you can add your ¾ tin of chopped tomatoes (you can add extra if you are making for more guests). Add salt & pepper to taste and mix.
  3. Now add the tablespoon of chutney and mix into the sauce.
  4. Simmer for 7 to 10 minutes on medium heat or until your relish has reduced.
  5. Set aside and keep warm.
  6. Now for the bacon. Heat-up a pan with a drizzle of sunflower oil. You can also fry the bacon on a non-stick pan with no oil. Once the pan has heated, throw in your slivers of bacon and sauté until crispy or until your personal preference. Crispy is always better.
  7. Just before the bacon strips are done, that’s when you throw in your maple syrup (or honey or normal syrup). Give it a toss in the pan until all the bacon slivers are beautifully coated, remove from heat and set aside. (Once you are ready to serve, you will need to lightly reheat the pan before you place onto your pizza slices.)
  8. Now, place your frozen pizza slices in a 200 deg. pre-heated oven for 10 to 12 minutes.
  9. Whilst the pizza is in the oven, you now fry your eggs to your personal preference. We suggest you fry an egg at a time, so that the eggs don’t blend with each other whilst frying. This would also be a great time to re-heat your tomato chutney relish and your bacon slivers.
  10. By now your pizza slices are ready. Remove them from the oven and place onto a cutting board so that you can cut them in half. You may prefer to keep one long rectangular piece per guest, as opposed to slicing your pizza in half. In that case all you would do is place toppings in the centre of the long slice and bake extra slices.
  11. Now, plate each slice onto the centre of your plate.
  12. Drizzle a dollop or 2 of your warn tomato-chutney relish.
  13. Add your fried egg. If you are using a bigger slice per guest, add two eggs, instead of one.
  14. Now, top with that delicious maple syrup bacon and you’re ready to eat. Make sure you don’t leave anything behind in the pan. Drizzle it all over the top.
  15. Garnish with basil or baby leaves and you’ll probably want to make another slice or 3!

Breakfast with a little twist. Just remember, you don’t always have to share!
