4 EASY PIZZAS USING LEFTOVERS FROM THE FRIDGE

We take your leftover meals and turn them into delicious tasty moments for your kids.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

INGREDIENTS

  • Leftover roast chicken
  • 3 x tablespoon mayonnaise
  • 2 x spring onions chopped
  • 2 x gherkins chopped
  • Salt and pepper to taste
  • 2 x Dr. Oetker Ital Mini Pizzas Cheese & Tomato

METHOD

  1. Take your leftover chicken, remove the skin, debone and then pull the chicken into strips and place in a medium size mixing bowl.
  2. Now, add the mayonnaise, the chopped spring onions, the gherkins and the salt and pepper to taste and mix until all the ingredients have combined.
  3. Place the Mini Pizzas into a pre-heated oven (200 deg) for 10 to 12 minutes.
  4. Once the pizzas have baked, you can spread the chicken mayo mixture, generously onto your pizza. You can slice in halves or thirds or you can keep as is.

B) LEFTOVER BOEREWORS – YOU WILL NEED

INGREDIENTS

  • Leftover boerewors
  • 1 x tablespoons chutney
  • 1 x white onion sliced
  • A drizzle of olive oil for frying
  • 2 x Dr. Oetker Ital Mini Pizzas Cheese & Tomato

METHOD

  1. In a frying pan, heat up a drizzle of olive oil.
  2. Once heated, add the sliced onions and sauté until translucent.
  3. Take your leftover cooked boerewors and cut into 2 cm thick slices and add them to your onions and sauté further.
  4. Lastly, add 1 tablespoon fruit chutney, mix and sauté for a further 2 minutes.
  5. Place the Mini Pizzas into a pre-heated oven (200 deg) for 10 to 12 minutes.
  6. Once the pizzas have baked, you can add the boerewors and caramelised onions onto your pizza and call the kids to munch away!

C) LEFTOVER VEGETABLE STIR FRY – YOU WILL NEED​

INGREDIENTS

  • Last night’s stir fry veggies
  • 1 x tablespoon sweet chilli sauce
  • 2 x Dr. Oetker Ital Mini Pizzas Cheese & Tomato

METHOD

  1. In a medium frying pan, add a drizzle of olive oil. Once heated, add the stir fry to the pan and sauté for 2 minutes.
  2. Now, add 1 tablespoon of sweet chilli sauce to the veggies and stir until absorbed into the veggies.
  3. Place the Mini Pizzas into a pre-heated oven (200 deg) for 10 to 12 minutes.
  4. Once the pizzas have baked, remove from oven and using a fork top your pizzas with the stir fry. Great healthy snack for kids  but not a bad option for adults either!

D) LEFTOVER BACON WITH BANANA AND YUMMY SYRUP – YOU WILL NEED​

INGREDIENTS

  • Leftover bacon
  • 1 x banana
  • 2 x tablespoons syrup (Illovo) honey if you don’t have syrup
  • 2 x tablespoons butter
  • 2 x Dr. Oetker Ital Mini Pizzas Cheese & Tomato

METHOD

  1. Place the Mini Pizzas into a pre-heated oven (200 deg) for 10 to 12 minutes.
  2. In a frying pan, melt the butter.
  3. Once melted, cut up the leftover bacon into slithers and sauté for a few moments just to heat-up the bacon. Ensure that the heat is on medium.
  4. Add the syrup into the pan and turn it over making sure that the bacon has been well coated.
  5. Finally, add the slices of banana and carefully mix, so that to ensure that the banana doesn’t break-up in the pan.
  6. Sauté for 3 to 4 minutes until all the ingredients are beautifully coated with that delicious gooey syrup and butter mixture.
  7. Remove the pizza from the oven and spoon some of that heavenly delight over each pizza. If there is any mixture left, keep that for yourself.
