HUMMUS WITH CARAMELISED ONIONS AND PEPPADEW SNACK

A tasty snack with our hummus recipe, pimped with peppadews and caramelised onions.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK SNACK RECIPE YOU WILL NEED

SHOPPING LIST

  • Happy Days Pizza Bases
  • 1 x tin chickpeas
  • 1 x garlic bulb
  • Lemon juice (1 x lemon)
  • olive oil
  • Salt & pepper
  • 1 x red onion
  • ground cumin
  • fresh or dry rosemary
  • 1 x jar of peppadews
  • Mozzarella cheese

QUANTITIES OF INGREDIENTS

  • Happy Days Pizza Bases
  • 1 x tin chickpeas (drained)
  • 2 x garlic gloves minced
  • 1 x tsp. Lemon juice
  • 2 x tbsp. olive oil
  • Salt to taste
  • ¼ tsp. pepper
  • 1 x red onion sliced
  • ¼ tsp. ground cumin
  • Sprig of fresh rosemary or 1 x flat tsp. dry rosemary
  • 5 x peppadews sliced
  • A drizzle of olive oil prior to serving
  • Mozzarella

METHOD

HOW TO MAKE YOUR MEDITERRANEAN PIZZA

  1. Take 2 bases and place on your work counter. Drizzle olive oil on each base and using a brush spread the oil across the surface of the base.
  2. Now take your fresh or dry rosemary and sprinkle generously on each base. And both in the oven for 10 to 12 minutes. Pre-heated 180°C

Now let’s make your dip.

  1. In a jug add your 1 tin of drained chickpeas. I also keep about 2 to 3 tablespoons of the brine to enhance my flavours.
  2. Now add your minced garlic, cumin lemon juice, salt and pepper to taste as well as your drizzle of olive oil and with your blitzer or blender smoosh and smoosh until all the ingredients are smoothly smooshed!

And you’re done. We choose to not add tahini in this recipe. If you would like tahini you can add a flat tbsp.

  1. Decant into a bowl and add 4 to 6 sliced peppadews and mix.
  2. Now 1 onion sliced, in a pan with olive oil and sauté for 4 to 5 minutes or until translucent.
  3. Now go to the oven to check up on your bases. Remove from the oven and let’s start plating.
  4. Cut your bases into as many slices as you like. Let’s prep on a platter. We like to line the platter with parchment paper.
  5. Now in your bowl of hummus add a drizzle of olive oil to loosen up the dip, mix and either serve it in your bowl or choose to decant onto a plate. It’s easier this way for your guests to scoop the humus with their focaccia.
  6. Garnish with your sautéed onions and some additional sliced peppadews.
  7. Plate your focaccia slices next to the hummus and time to snack!
