We’re taking a humble potato and turning it into a work of edible art!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

QUANTITIES OF INGREDIENTS

  • 6 X Potatoes ( washed and scrubbed) 1 per serving
  • 1 x green valley creamed spinach and feta
  • Salt and coarse pepper to taste
  • A sprinkle of oregano
  • 150 ml x melted salted butter
  • A drizzle of olive oil
  • 4 x small cubes of feta cheese (garnishing)
  • 2 x peppadews (garnishing)
  • 1 x tsp. chopped finely chopped parsley (garnishing)

METHOD

  1. Make sure your potatoes are washed and well-scrubbed.
  2. Dry the potatoes with a paper towel.
  3. Using a sharp knife, slice the potatoes thinly, accordion style. Make sure you don’t cut right through the potato. You can place 2 chopsticks on either side of the potato to prevent your knife from slicing all the way through the potato.
  4. Once you’ve sliced all your potatoes, place them in an oven dish.
  5. In a separate bowl melt 150 ml of butter. Once melted, add a drizzle of olive oil to prevent the butter from burning.
  6. And lastly, add a teaspoon of crushed garlic and whisk together.
  7. Now, using a brush, generously coat each potato in the butter/oil garlic mixture.
  8. Sprinkle some salt and black coarse pepper over the potatoes.
  9. Add lastly, a sprinkle of dry oregano.
  10. Now pour all that remaining magnificent golden liquid (butter)over the side of the dish, so that you don’t wash off all the salt and pepper and oregano from the top of the potatoes.
  11. Cover with a lid or foil and place in a pre-heated oven (180degrees) for 40 to 50 minutes. Time is dependent on the strength of your oven.
  12. Now, 10 minutes before your potatoes are done, place the Green Valley, Creamed Spinach and Feta into the microwave for 7 minutes.
  13. Both the creamed spinach and feta, as well as the hasselback potatoes, should both be ready by now. Decant both into individual platters/bowls.
  14. Sprinkle some chopped parsley onto the hasselback potatoes, together with a drizzle of that delicious golden liquid from the pan.
  15. And on your creamed spinach, garnish with cubes of feta and peppadews.
