TOMATO VEGETARIAN PIZZA AND MUSHROOM, ONION & BELL PEPPER VEGAN PIZZA

A little something for our vegetarian and vegan friends.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

SHOPPING LIST

TOMATO VEGETARIAN PIZZA

  • 1 x Happy Days 4 x Bases
  • 1 x 400g tin chopped tomatoes
  • 1 x 100g mature cheddar
  • A handful of baby greens
  • Olive oil
  • An assortment of fresh baby red, green, yellow tomatoes
  • Any leftover cut tomatoes from your fridge
  • 2 x garlic cloves minced
  • Salt & pepper

MUSHROOM, ONION & BELLPEPPER VEGAN PIZZA

  • 1 x Happy Days 4 x Pizza Bases
  • 1 x 400g tin chopped tomatoes
  • Red, green & orange bell peppers
  • Olive oil
  • 1x Red onion
  • Button mushrooms
  • Sea salt & black pepper
  • 2 garlic cloves
  • Dry basil
  • Vegan parmesan (optional)

QUANTITIES OF INGREDIENTS

TOMATO VEGETARIAN PIZZA

  • 1 x Happy Days 4 x Bases
  • 1 x 400g tin chopped tomatoes
  • 1 x 100g mature cheddar
  • A handful of baby greens
  • 10ml olive oil
  • An assortment of fresh baby red, green, yellow tomatoes
  • Any leftover cut tomatoes from your fridge
  • 2 x garlic cloves minced
  • Salt & pepper to taste

MUSHROOM, ONION & BELLPEPPER VEGAN PIZZA

  • 1 x Happy Days 4 x Pizza Bases
  • 1 x 400g tin chopped tomatoes
  • ½ cup red, green & orange bell peppers
  • 3 Tsp olive oil
  • ½ red onion finely diced
  • 2 x cups sliced button mushrooms
  • ¼ tsp sea salt & ¼ tsp black pepper
  • 2 garlic cloves minced
  • ½ tsp dry basil
  • Vegan parmesan (optional)
  • Handful of fresh basil for garnish

METHOD

TOMATO VEGETARIAN PIZZA

  1. Decant your tinned tomatoes in to a bowl. Add your two minced garlic cloves, a drizzle of olive oil and some salt & pepper to taste. Mix so all ingredients are combined. 
  2. Bring out your pizza bases and spoon the mixture onto the bases.
  3. Now place your large leftover sliced tomatoes onto each base. Grate some cheese onto the bases and now cut up your baby tomatoes and place on top of the cheese. Because we can never have too much cheese – sprinkle another layer over that!
  4. Into the preheated oven of 200 degrees for 10-12mins.

Whilst the pizzas are baking, let’s quickly dress the baby greens.

  1. Place your baby greens in a bowl and drizzle with olive oil and salt and pepper to taste. Toss, cover and place in the fridge until you are ready to use.
  2. 10-12mins later bring out the pizzas from the oven. Wait for 2-3mins before placing the baby greens onto the pizza as if the pizza is too hot the greens will wilt.

Slice and enjoy! Deliciously vegetarian.

MUSHROOM, ONION & BELLPEPPER VEGAN PIZZA

  1. In a medium-size pan heat 2 – Tbsp olive oil.
  2. Add finely diced red onions and sauté for 2 – 3 mins.
  3. Add minced garlic cloves
  4. When you start smelling the beautiful aroma from the pan, you can add your red, yellow and green peppers and sauté for about 4-5mins.
  5. Once the bell peppers have softened, add your 2 cups of sliced button mushrooms with some salt and pepper to taste and sauté until beautifully brown and remove from the heat. Set aside.
  6. If you want some zing, at this point add some chilli flakes as an option.
  7. Decant the chopped tomatoes into a bowl. Add a ¼ tsp salt and pepper and ¼ tsp basil. Mix.
  8. Bring out the pizza bases from the freezer and using a spoon place an equal amount of the basil tomato salsa on to each base.
  9. And into the oven preheated at 200 degrees for 10-12 mins.

Once baked, let’s top these babies!

  1. Now top with the bell pepper mix and sprinkle with vegan parmesan (this is made with hemp seeds, nutritional yeast and garlic powder. Some brands replace the hemp seeds with blitzed cashew) or any other vegan cheese.
  2. Garnish with fresh basil leaves.

And Vegan pizza has never tasted so yummy!
