A fabulous and easy snack for games or movie night!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK AND EAST RECIPE YOU WILL NEED

SHOPPING LIST

  • 1 x packet MINIS | Bacon & Cheese – this recipe uses 3 pizzas
  • Salted butter
  • All-purpose flour
  • Full cream milk
  • Cheddar or mature cheddar for a stronger taste
  • 20 to 30 kebab sticks
  • Salt and pepper
  • Parsley

QUANTITIES OF INGREDIENTS

  • 1 x packet MINIS | Bacon & Cheese – this recipe uses 3 pizzas
  • 100 g x salted butter
  • 4 x tsp. all-purpose flour
  • 2 x cups of full cream milk
  • 2 x cups grated cheddar or mature cheddar for a stronger taste
  • 20 to 30 kebab sticks – you can also use the short kebab sticks
  • Salt and pepper to taste
  • Chopped parsley for garnishing – anytype of parsley

METHOD

  1. Preheat your oven to 200 ˚ C.
  2. You will need a whisk and a medium size saucepan.
  3. Place your saucepan on medium heat and add the butter.
  4. Once the butter has melted, slowly add your flour. Keep stirring until all the flour has been absorbed into the butter, creating a pasty consistency. You need to cook out the flour and that takes 3 to 4 minutes. Don’t stop stirring or it will catch at the bottom.
  5. Then, slowly pour the milk into your saucepan whilst whisking. Slowly, slowly does it. It’s worth the patience, trust me. Just before the milk starts to boil and come to the surface, remove the saucepan from the heat.
  6. Now add the grated cheese and using your whisk, whisk vigorously, this way all the cheese will melt evenly.
  7. Now add your pepper and slat to taste. If your cheese is very strong/mature, go slowly on the salt, it might not need as much.
  8. Keep mixing until your sauce becomes a glorious veil of stretchy, yummilicious cheese. 

NOW FOR THE PIZZA

  1. When ready place the pizza in the oven, for 10 to 12 minutes and once done, you’re ready to make your dippers.
  2. Slice your minis into 4 or 8 slices. Then, using kebab sticks, pierce the mini slices to make your individual dippers.
  3. And decant your fondue into a bowl, garnish with some chopped parsley and you’re ready to dip away.
  4. Now if you’d rather not make dippers, you can pour the fondue directly over the whole mini and serve one or two slices per guest with a sprinkle of chopped parsley. Either way that fondue is celestial to the taste.

NB: If your fondue cools down, never warm it up in the microwave. Slowly reheat it in a saucepan, stirring continuously. Do not add milk to the completed fondue it will curdle the fondue.

Leftovers:  With the left-over fondue, place in a bowl or Tupperware and then add cling film directly onto the surface of the fondue so that it doesn’t form a skin. You will then re-heat in a saucepan on a medium heat when needed again.

It’s a delicious snack and very yummy on sandwiches too or just a finger dip when no one else is looking!
