This Easter won’t be the usual, big lazy SA lunches, so we’ve created a spin on a Mexican flavour, but with fillet prepared the way we South Africans enjoy our meat! Yes you’re locked down but your kitchen isn’t! Let’s start cooking.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

INGREDIENTS

  • 2 x large garlic cloves, crushed
  • 1 x teaspoon Dijon mustard
  • 20g sweet dill pickled gherkins diced
  • 4 x tinned anchovy fillets in oil, drained, chopped
  • 50g capers in brine – drained and rinsed
  • 1 x tablespoon lemon juice
  • 2 x tablespoons white wine vinegar
  • Salt to taste

METHOD

  1. Place all of the above ingredients into a mixer and blend by pulsing. We do this so that all the ingredients don’t become a paste. We will pulse again when we add the fresh leave to the salsa. Pulse 3 to 4 times.

FOR THE SALSA VERDE – YOU WILL ALSO NEED

INGREDIENTS

  • 30g flat leaf parsley
  • 20g fresh mint leaves
  • 20g fresh basil leaves
  • 1 x cup grated mozzarella
  • 2 x Dr. Oetker Happy Days Pizza Bases

METHOD

Once you have blended the first lot of ingredients, add the following ingredients into the blender:

  1. Flat leaf parsley and pulse 3 to 4 times
  2. Fresh mint leaves and pulse and pulse 3 to 4 times
  3. Fresh basil leaves and pulse and pulse 3 to 4 times
  4. And lastly, slowly pour the olive oil through the opening at the top of the blender, whilst the blender is mixing. Mix for 20 seconds.
  5. Your Salsa Verde is ready. Decant into a bowl and set aside.
  6. Now, for your pizza base. Sprinkle with 1 x cup grated mozzarella and add salt to taste.
  7. Then, place your happy day pizza base into the oven for approximately 10 to 12 minutes (200 deg)

Now, whilst that’s in the oven, let’s prepare the fillet!

FOR THE FILLET – YOU WILL NEED

INGREDIENTS

  • 300gr to 350gr piece of fillet
  • Salt and pepper to taste
  • Pinch of dry oregano

METHOD

  1. Salt and pepper your fillet on all sides.
  2. Then add the dry oregano
  3. In a pan, heat a drizzle of olive oil on medium heat. Wait for the oil to heat-up and when it does, using tongs, place your fillet into the hot pan. Here it all depends on your personal preference of meat. We prefer our meat rare. But if you choose something bordering on charred, we won’t judge you. For rare, (as per the video) sear the meat for approximately, 2 to 3 minutes on each side.
  4. Once the fillet is done to your preference, plate it on a wooden board and let it rest for a few minutes.
  5. Then, using a sharp knife cut the entire cooked fillet into slices.
  6. By this stage your pizza base will be done, remove from oven and place onto a cutting board.
  7. Cut the pizza into either 4 or 8 slices, depending on how much you feel like sharing!
  8. Then, place the sliced fillet on each piece of pizza
  9. Drizzle the Salsa Verde generously across the pizza, ensuring that each slice has been drizzled.
  10. An optional extra would be to sprinkle chopped parsley over the pizza for garnishing.
And your Easter snack is ready for the family! We recommend this pizza option as a starter for your Easter lunch!
