MARGHERITA WITH TOMATO SPICY SALSA

A cold tomato, spicy salsa relish for that perfect TV or games snack. Just scoop and eat!

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

SHOPPING LIST

  • 1x Ital Pizza Classic Margherita
  • 3 x medium ripe tomatoes
  • Flat leaf parsley
  • 1 x red onion
  • 1-2 green fresh chillies
  • 1 x garlic bulb
  • cumin
  • A pinch of white sugar
  • sunflower oil
  • Salt and pepper
  • Yellow cheddar

QUANTITIES OF INGREDIENTS

  • 1x Ital Pizza Classic Margherita
  • 3 x medium ripe tomatoes chopped
  • ¼ cup flat leaf pasrley chopped
  • ¼ cup purple onion diced
  • 1-2 green chillies chopped, in oil
  • 1 x garlic minced
  • ¼ tsp. ground cumin
  • A pinch of sugar
  • A drizzle of sunflower oil
  • Salt and pepper to taste
  • 1 x cup yellow cheddar cheese grated

METHOD

  1. Using a sharp knife, score the bottom of each tomato.
  2. Place tomatoes in a large bowl. Fill the bowl with boiling hot water, making sure the tomatoes are submerged. 5 to 6 minutes. You will see the skin elevating where you scored.
  3. Using your knife slowly remove the skin. Careful you don’t burn your fingers.
  4. Now dice your tomatoes into cubes and place into a blender. You can also use a hand blender or alternatively you can grate the tomatoes.
  5. Once you’ve blended the tomatoes add the finely chopped onions, fresh chillies, minced garlic, sugar, cumin fresh parsley and salt and pepper to taste.
  6. Add a drizzle of sunflower oil and blend all ingredients. If you don’t have a blender and will do all this by hand, ensure that the parsley and the garlic are finely chopped.
  7. The tomatoes release quite a bit of liquid which you don’t want as they will make your pizza slices soggy. So pour the salsa relish into a sieve to remove the excess liquid and decant into a bowl and refrigerate.

When you’re ready to eat, prepare the pizza!

  1. Take your frozen pizza and top with grated yellow cheddar and place in a pre-heated oven. (200deg)

And once the pizza is ready, out the oven, slice and bring out the salsa relish from the fridge. Dip or scoop and enjoy either with friends or completely by yourself! We would recommend the latter!
