32 PIZZINIS WITH 4 DIFFERENT DELICIOUS TOPPING IDEAS

A little bite of tasty pleasures, with mouthfuls of flavour. To be enjoyed as a snack, a celebratory canapé or as a little private indulgence.

How many people does it serve?

This should be an easy question to answer, but in South Africa, it’s complicated, due to our colourful multi-cultural rainbow nation.

  1. In an Anglo Saxon household, each pizza/meal should feed between 4 to 6 guests.
  2. In a Mediterranean, Ethnic or African home it could feed as little as 1 to 3 people for a single meal as food needs to be experienced in large quantities.
  3. If you’re of Scandinavian extraction, each meal could last you a month!

Then we need to look at your emotional state, as that is a determining factor when dealing with quantities.

  1. Have you had a terrible day with your boss?
  2. Did you fight with your spouse?
  3. Are your kids driving you insane?
  4. Is your wi-fi slower than the Groot Trek?
  5. Is the lockdown getting to you?
  6. Did that hot guy from the gym eventually whatsapp you?
  7. How are you doing with those skinny jeans?
  8. Is your mother-in law doing what mother-in laws do?
  9. What season of Game of Thrones are you watching?

All these contributing factors could influence the amount you will choose to eat; Ranging from “just a slice/bite” to “call in the kitchen Calvary we’re going down babies”!

FOR THIS QUICK RECIPE YOU WILL NEED

INGREDIENTS

  • 2 x figs preserved
  • 8 x small pieces of gorgonzola cheese or any blue cheese
  • 2 to 3 chopped walnuts
  • 2 to 3 fresh basil leaves torn
  • Black pepper to taste
  • 8 x Dr. Oetker Ital Pizza Minis

METHOD

  1. Take your preserved figs and cut them into quarters and set aside in a bowl.
  2. Cut your gorgonzola into small cubes and place in a bowl.
  3. Using a sharp knife, cut your walnuts into small pieces and set aside in a bowl.
  4. Place the Pizzinis onto the white parchment paper provided.
  5. Now add the cubed gorgonzola onto the 8 Pizzinis. If you choose to make the same topping for more than 8 Pizzinis, adjust ingredients accordingly.
  6. Place the Pizzinis into a pre-heated oven (200 deg) for 10 to 12 minutes. NB: Place the Pizzinis with the parchment paper directly onto the oven rack. Do not place them in an oven tray.
  7. Once the Pizzinis are ready, remove them from the oven rack and place onto your counter.
  8. Now garnish each Pizzini with 1 x quartered preserved fig.
  9. Add one piece of your already cut-up walnut.
  10. And finally garnish with your fresh basil.

B) GOATS CHEESE AND CARAMELISED ONIONS – YOU WILL NEED

INGREDIENTS

  • 8 x small goats cheese balls
  • 1 x small white onion, sliced and caramelised
  • A drizzle of olive oil for onions
  • 4 to 5 chopped chives
  • 8 x Dr. Oetker Ital Pizza Minis

METHOD

  1. In a frying pan, drizzle some olive oil. Once heated, add the sliced onions and sauté until they become translucent. Set aside in a bowl.
  2. Place the Pizzinis onto the white parchment paper provided.
  3. Now add the goats cheese balls onto the 8 Pizzinis. One cube for each Pizzini. If you choose to make the same topping for more than 8 Pizzinis, adjust ingredients accordingly.
  4. Place the Pizzinis into a pre-heated oven (200 deg) for 10 to 12 minutes. NB: Place the Pizzinis with the parchment paper directly onto the oven rack. Do not place them in an oven tray.
  5. Once the Pizzinis are ready, remove them from the oven rack and place onto your counter.
  6. Now garnish each Pizzini with your caramelised onions and using scissors, bunch the chives together and cut them over the top of the Pizzinis to garnish.

And your topping number 2 is ready!

C) BRUSCHETTA TOPPING – YOU WILL NEED​

INGREDIENTS

  • 2 x tablespoons of chopped fresh basil
  • 1 x tomato chopped into cubes
  • 1 x large garlic clove crushed ( if small use 2 cloves )
  • 1 x tablespoon of olive oil
  • Salt and pepper to taste
  • 8 x Dr. Oetker Ital Pizza Minis

METHOD

  1. In a bowl add all the ingredients together and mix until all the ingredients are nicely coated with the olive oil, garlic and chopped basil, not forgetting to add salt and pepper to taste.
  2. Place the Pizzinis onto the white parchment paper provided.
  3. If you choose to make the same topping for more than 8 Pizzinis, adjust ingredients accordingly.
  4. Place the Pizzinis into a pre-heated oven (200 deg) for 10 to 12 minutes. NB: Place the Pizzinis with the parchment paper directly onto the oven rack. Do not place them in an oven tray.
  5. Once the Pizzinis are ready, remove them from the oven rack and place onto your counter.
  6. Now, spoon the bruschetta mixture onto each Pizzini

And your topping number 3 is ready!

D) FETA, CHILLI AND PEPPADEW TOPPING – YOU WILL NEED​

INGREDIENTS

  • 1 x cup, crumbled feta cheese
  • 6 x peppadews chopped or sliced
  • 1 x teaspoon fresh chillies finely diced into ramekin with olive oil. (enough oil to cover chillies)
  • Black pepper to taste
  • 8 x Dr. Oetker Ital Pizza Minis
  • Optional: A drizzle of olive oil to bind mixture further

METHOD

  1. In a bowl add all the ingredients together and mix until all the ingredients are nicely coated with the olive oil from the chilies. If you feel that the mixture needs some additional olive oil, drizzle until the mixture becomes pasty.
  2. Place the Pizzinis onto the white parchment paper provided.
  3. If you choose to make the same topping for more than 8 Pizzinis, adjust ingredients accordingly.
  4. Place the Pizzinis into a pre-heated oven (200 deg) for 10 to 12 minutes. NB: Place the Pizzinis with the parchment paper directly onto the oven rack. Do not place them in an oven tray.
  5. Once the Pizzinis are ready, remove them from the oven rack and place onto your counter.
  6. Now, spoon the feta mixture onto each Pizzini . Finish it off with chopped fresh basil.

And topping number 4 is ready! Plate onto beautiful platters and enjoy. Great to enjoy with the family or with friends, or just you in front of the TV. After all we all need some comfort love!
