Soup is soul food!

As a nation of summertime braai peeps, we sometimes underestimate the pleasures and warmth we can create in winter.

Amid a cold spell, the act of cooking something as simple as a pot of soup together can become a celebration of life. 

When we gather around to chop vegetables, we are enjoying togetherness in a time when social distancing is the norm everywhere else. Think back on your fondest family moments … betcha food is somewhere in the picture. And when a hearty, healthy steaming pot of soup graces the table, it somehow promises sustenance and hope, reminding us of our own childhood homes and happy times. 

The TastyMoments team knows, when it comes to soup, there is no space for any “foodier-than-thou” elitism. Everyday ingredients, a couple of helping hands and maybe some upbeat music is all you need. 

TOP TIP: The great thing is that you can make a super soup from whatever you have in the fridge. Start by slowly frying two chopped onions plus a large clove of garlic in a dash of oil. Once soft and translucent add whatever veg you have and continue frying it all up to release the flavours before adding your chosen stock. Tomatoes are a great addition as it lends the acidity required to carry vegetables such as carrots, cabbage, spinach or whatever else you’re using. Let the soup mixture cool, liquidize well, reheat and serve with the family’s favourite Ital Pizzas. 

If you are up for tackling a grand French classic, try this surefire winner:

Brown onion soup (With Ital Pizzini Croutons)

SOUP – For 6 servings:

  • 4 large brown onions
  • ¼ cup oil
  • ¼ cup of flour
  • 2 tbsp of Worcestershire sauce
  • A cube of beef stock
  • 2 tbsp of tomato paste
  • 1 tsp sugar
  • A good grinding of black pepper
  • Salt to taste
  • 5 cups of boiling water

Optional:

  • A bit of chilli sauce
  • A dash of sherry (or wine vinegar) 

METHOD 

Thinly slice onions and cook over moderate heat for 20 – 30 minutes frequently stirring until nice and brown. The browning is essential to achieve the correct flavour. Then stir in the sugar and brown some more before stirring in the flour. Dissolve the rest of the ingredients into a cup of the boiling water and add to the pot. Bring to the boil. Add the rest of the water and cook for another 15 minutes. Taste, add salt, hot sauce and/or sherry at the end.

This revered soup takes on even more style when served with our special Ital Pizzini croutons. Tuck in.
